Quick and Easy Flatbread Pizza with Lamb

We’re blessed to live down the street from a major farmers market, and last fall, I purchased several pounds of ground lamb.  Tim refuses to eat it so it’s taken me a while to get through it all, but since he was away for the weekend, I decided to put it to good use.

The following was quick, easy, and completely delicious.  Use what you have on hand, but if you have some lamb, definitely try it out this way!

1 round flatbread (white)

Organic vodka sauce (from Trader Joe’s)

Ground lamb

Mozzarella cheese

Salt-free Mrs. Dash, dried oregano, dried basil, ground black pepper

Place the flatbread on the cookie sheet and spread with sauce.  I used the vodka sauce because it’s delicious and the chunky tomatoes add a nice touch to this simple meal.  Brown the lamb and then drain well.  Mix in the spices/herbs you choose to give your ground lamb that Italian flare, and then spread it over the sauce.  Top with cheese, and then give it a dash of the herbs/spices.  Bake at 350 until the cheese starts to caramelize. Remove from oven and cut.

It was so quick to make and quite tasty.  I fixed more lamb than I needed, so I threw it in a freezer bag and it’s ready to go for when I want to make another one.
